Everybody loves a good menu hack—Instagram search Starbucks’ secret menu or Google In-N-Out’s secret menu and get ready to join the obsession. Off-the-menu dishes are popular because of the excitement that comes from discovering something exclusive and special. One of our favorites is the bone-in veal chop/eggplant Parmigiana hybrid at Piero’s. Owner Freddie Glusman created the dish because he loves eggplant Parm as an appetizer to share, and he also loves the veal chop. So why not pile them up into one completely epic, calorie-laden combo? And at Piero’s, where you can get a glimpse of some of old Vegas’ most famous faces mingling with new Vegas socialites and Hollywood types, it’s always good to order big so you have extra to share with whoever cozies up to the table.
